Fattoush Salad with Sumac-Olive Oil Dressing

Ingredients:

  • 2 cups chopped romaine lettuce
  • 1 large cucumber, diced
  • 2 medium tomatoes, chopped
  • 1 small red onion, thinly sliced
  • 1 bell pepper, chopped
  • ¼ cup chopped fresh parsley
  • ¼ cup chopped fresh mint (optional)
  • 2 toasted pita breads, broken into pieces

For the Dressing:

  • ¼ cup Nour Olive Oil
  • 2 tablespoons lemon juice
  • 1 teaspoon ground sumac
  • Salt and pepper to taste

Instructions:

In a large salad bowl, combine romaine, cucumber, tomatoes, onion, pepper, parsley, and mint.

In a small jar or bowl, whisk together olive oil, lemon juice, sumac, salt, and pepper.

Just before serving, toss the salad with the dressing.

Add toasted pita pieces and toss again gently. Serve immediately.
